Our cattle breeds

All our beef cattle are grass-fed and breeds include Droughtmaster, Charolais, Brahman at this time, plus our difficult-to-source (they are usually lot-fed) grass-fed Wagyu. They are between 24 and 36 months old, finished on pasture grasses and crops and have an approximate dressed weight between 150 and 220 kg, give or take 20 kg. By letting our prime grass-fed steers age up to 36 months, they develop a fine prime beef flavour, while retaining tenderness as a result of their stress-free environment.

We are also processing our first F1 Wagyus from March 2011 and they are in limited supply. Interest is very strong for this grass-fed, healthy, superior beef. We recommend you register your interest with us to secure a packs for when they are available. Prices and pack details are available on our Buy grass-fed Wagyu page.

Wagyu cross steers, providing marbled meat that is renowned for it’s flavour, juiciness and tenderness, will become available in limited numbers from early 2011 onwards as our breeding herd of Wagyu increases. These Wagyu steers will also be aged between 24 and 36 months.

From time-to time, as demand grows, we may also source other excellent cattle breeds from other small local growers who share our ethics for humanely bred beef, and whose processing is controlled by our own strict requirements. By joining our email list, you’ll be kept up to date on availability of these special breeds, in addition to our own beef.

Charolais and Charbray (limited availability beginning July 2011)

Charolais are a beautiful, solid and hardy French breed – the first European breed to be introduced into Australia in 1969. They are an important breed in Australia now where they are grown as pure Charolais, or crossed with others to create excellent beef. These particular animals (from a property just west of Gympie) have been raised on native pastures where they do very well and yield great meat. We are very proud to be able to offer you this product.
